A delicious simple soup inspired by a national dish of Tanzania in Africa. This dish is traditionally served with Ugali, a corn flour porridge and also delicious served with bread and salad!

  • 1 15 1/2 oz can red beans, drained and rinsed or 3/4 c. dry beans, cooked
  • 2 tbsp olive oil
  • 1/2 small onion chopped
  • 1/2 green pepper chopped
  • 1/2 tsp curry powder
  • 1/2 cup chopped tomatoes canned if not in season
  • 1/2 tsp salt optional
  • 1/4 tsp freshly ground black pepper
  • 1 1/2 cups unsweeetened coconut milk

Instructions
  1. If using dried beans, soak in large bowl, covered with 2-3 inches of water overnight. Drain, place in pot, cover with fresh water and bring to boil. Reduce heat to simmer, stirring occasionally until desired tenderness is reached, for 1-2 hours.
  2. In a pot or large skillet, heat oil on medium high and sautee onions and peppers for 2 minutes until soft.
  3. Stir in spices and tomatoes, cooking for another 2 minutes.
  4. Add beans and coconut milk. Reduce heat and simmer for 10 minutes.

  • 1 medium onion diced
  • 3 medium carrots diced
  • 3 stalks Celery diced
  • 3 cloves garlic diced
  • 1 tbsp olive oil
  • 1 1/2 cups vegetable broth reduced sodium
  • 1 1/2 cups water
  • 4 1/2 cups cooked navy beans or 3 – 15cans navy or cannellina beans rinsed and drained
  • 1 tsp smoked paprika
  • 1 tsp Rosemary dried
  • 1/2 tsp thyme dried
  • 1 tsp Sea salt
  • 1 tsp course black pepper
  • 1/4 cup Parsley fresh, chopped

Instructions
  1. In a medium skillet, saute onions, carrots, celery and garlic for 8-10 minutes in olive oil until soft.
  2. In a stockpot, add water, veggies stock and 3 cups or 2 cans of beans. Puree mixture with a hand blender, then add veggies and spices.
  3. Bring to a boil and simmer for 20-30 minutes.

  3. Add beans, tomato juice, diced tomatoes and pumpkin puree.

Instructions
  1. In a large stockpot, saute onions and garlic in olive oil stirring until translucent.
  2. Add chicken, onion, mushrooms, chicken broth, water, navy beans, corn, chilies, garlic and seasonings. For a thicker soup puree or mash 1/2 of the can of beans before adding.
  3. Bring to a boil and then simmer for 45 minutes to one hour, stirring occasionally. Taste and adjust seasonings as desired
  4. Add kale in the last few minutes and cook until tender. Serve hot.

  • 1 can Sliced tomatoes 28oz can w/Italian seasonings
  • 1 15 ounce chicken broth or Vegetable Broth (Low Sodium)

  • 2 teaspoons Roasted bottled garlic
  • 1 Zucchini sliced
  • 1 Yellow crookneck squash sliced
  • 1 cup Sliced cabbage sliced and diced
  • 2 Celery sliced
  • 2 carrots sliced
  • 6 okra sliced
  • 1 cup Mushrooms sliced
Choose 1 of the following starches to add:
  • 6 small red potatoes cut into quarters skin on
  • 1 can Beans (butterbeans, black, navy) drained and rinsed Approx. 15 oz
  • 1 can White corn drained and rinsed Approx. 15 oz
Herbs and Spices
  • salt to taste
